What A Raw Vegan Cheesecake Actually Is

Most people picture cheesecake as the New York version: cream cheese, eggs, flour base, baked, often pre-frozen. Ours is built from a completely different recipe. The "cream" is soaked cashews blended with coconut milk, lemon, vanilla, and a touch of agave or maple — no dairy, no eggs, no flour, no oven. The base is almonds, dates, and coconut oil pressed by hand. The fruit on top is real fresh strawberries or blueberries, not jam or compote.

The result is something between a panna cotta and a mousse — silkier than baked cheesecake, less heavy, and it never separates or weeps the way baked vegan cheesecakes can. Customers who try it often say it doesn't taste like a substitute; it tastes like its own thing. That's the angle. We are not pretending to make dairy cheesecake without dairy. We are making a cashew-cream raw cake that happens to scratch the same itch.

Cashew Cream Replaces Mascarpone

Cashews soaked overnight, blended with coconut milk and lemon, set with coconut oil. The texture is smooth, slightly tangy, and it holds shape without gelatin or eggs. No dairy at any stage.

Baked vegan cheesecakes can split on top or release water at the base. Ours is set in the freezer, so the texture stays uniform from the day it is made to the slice on your plate.

Strawberry uses fresh Spanish strawberries — the most-ordered cake in our lineup. Blueberry is tarter and less sweet. Same cashew-cream base, two very different finishes.

How does a raw vegan cheesecake actually taste compared to a baked one?
Lighter, fresher, less heavy on the palate. Baked New York cheesecake is dense and eggy; ours is silkier, closer to a panna cotta or set mousse. The cashew gives a mild creamy tang that reads as "cheesecake-like" without trying to mimic cream cheese exactly.
Strawberry or blueberry — which should I order?
Strawberry is sweeter and more universally liked, so first-time orders almost always go strawberry. Blueberry is tarter, less sweet, and deeper in colour — order it if you (or your guest) usually find desserts too sweet, or if you want a stronger fruit-forward flavour.
Can I get a cake half strawberry, half blueberry?
Yes, on the Big size (22 cm) we can split the top — half strawberry, half blueberry — for the same price. Smaller sizes do not split well visually so we keep those single-flavour. Mention it on the order form notes or by WhatsApp.
Is it really gluten-free, dairy-free, eggless, and sugar-free all at once?
Yes — every cheesecake we make is all four. The base uses almonds and dates (no flour). The cream is cashew and coconut milk (no dairy, no eggs). Sweetness comes from dates and a small amount of agave (no refined sugar).
How big are the cheesecakes and how many people do they serve?
Four sizes: Small 12 cm (1–2 people, €30), Medium 14.5 cm (4 people, €50), Normal 16 cm (6–8 people, €60), Big 22 cm (10–12 people, €85). The cheesecake is rich, so most groups under-estimate how far a slice goes.
How do I store and serve it?
Keep it frozen — about two weeks at peak quality. To serve, slice with a hot knife straight from the freezer (cleaner cuts), then defrost slices in the fridge for 2–3 hours, or 30–60 minutes at room temperature. Eating frozen-firm is also fine, more like an ice-cream cake.
