Olga Crismaru, founder of Dulce Vegan in Costa Adeje, Tenerife

Olga Crismaru moved to Tenerife from Moldova eight years ago. By training she's a choir conductor — dirijor de cor in Romanian — and before that a singer who once made it through the Eurovision Moldova preselection. She speaks four languages: Romanian, Russian, Spanish, and English. None of those is "pastry chef".

Dulce Vegan started for one practical reason: her husband can't comfortably eat ordinary desserts. Conventional cakes cause him indigestion, and he doesn't like things that are heavily sweet. So Olga went looking for a cake he could actually eat.

How it started

She trained online — first a stack of courses on healthy diet and nutrition, then a live course with a professional raw vegan baker. 10 March 2021 was the day she made her first cake at home.

Then came the testing. She invited friends over for coffee and a two-hour conversation, with a different cake on the table each visit. The flavours that won the room are the ones on the menu now. The ones that didn't quietly disappeared.

The first paying customer

A friend asked Olga to make a birthday cake for his daughter. The girl had a severe gluten intolerance and couldn't eat the cake at her own party. The one Olga made for her — heart-shaped, lemon and chocolate — is the cake in this photo. It was the first cake Dulce Vegan ever sold.

A lot of cakes Olga still makes today have a similar reason behind them: a child with a gluten intolerance, a baby on no refined sugar, a vegan partner at a non-vegan birthday. The rest of the table eats the same cake. Most don't notice it's vegan until someone says so.

How an order actually works

Every cake is made fresh, by hand, for one specific order. There's no walk-in counter and no shelf of pre-made stock. You pick the flavour, size, and date — Olga handles the rest.

The order form does one extra thing most online bakeries skip: it lists the ingredients of the cake you've chosen and asks you to confirm nobody at the table has an allergy or intolerance to any of them. It takes two seconds and it has caught problems before they reached the cake stand. Reviewers mention this kind of attention often — it's deliberate, not an accident.

What Dulce Vegan doesn't do

No wedding cakes. Raw vegan cakes are frozen by design — they melt fast in the wrong conditions, and a wedding day is a bad day to find out the venue's fridge doesn't close properly. Wedding logistics also tend to come with last-minute structural changes that frozen cakes don't survive. Birthdays, anniversaries, surprise deliveries, gluten-free orders, custom flavours — yes. Weddings — sorry, no.

No walk-ins. Pre-order only, by form or WhatsApp. One Google review describes someone who drove to the address without ordering first, found the studio empty, and wrote the review specifically so others wouldn't make the same trip. Read it as a warning, not a complaint.
