The strawberry cheesecake is the single most-ordered flavour we make, and it is also the most-converted: people taste it expecting compromise, and instead get a cake that tastes the way strawberry cheesecake is supposed to taste, just lighter.

The cream is soaked cashews blended with coconut milk, lemon, and vanilla, set with coconut oil — silkier than baked cheesecake, none of the chalky aftertaste cheaper vegan cheesecakes can have. The strawberries are fresh, sliced by hand on top, and folded through the cream layer. We do not use jam, compote, or strawberry flavouring. When strawberries are in season in mainland Spain (roughly March–June, and again November–December), the difference shows.

Are the strawberries fresh, frozen, or some kind of compote?
Fresh, sliced by hand. We do not use jam, compote, syrup, or strawberry flavouring. When mainland Spanish strawberry season is on (roughly March–June and again November–December) the cake is at its peak; outside those months we still source the best fresh strawberries available.
Why is strawberry the most-popular flavour?
It works for the widest range of palates. Strawberry is universally liked, the cashew cream is mildly tangy without being sharp, and the cake reads as a "real" strawberry cheesecake to non-vegan eaters. For mixed groups (vegan + non-vegan, adults + kids), it is the lowest-risk pick.
How sweet is it compared to a regular strawberry cheesecake?
Noticeably less sweet. There is no refined sugar — sweetness comes from dates, the strawberries themselves, and a small amount of agave. Customers who have cut sugar describe it as the right level of sweet; customers used to bakery cheesecake sometimes mention it tastes "cleaner" than expected.
Can I get the strawberries inside only — not on top?
Yes. If you want a cleaner top (for example, to write a name in chocolate, or for a cleaner photo), we can fold the strawberries through the cream and leave the top plain. Note this on the order form or by WhatsApp.
How does it differ from the blueberry cheesecake?
Same cashew-cream base. Strawberry is sweeter, lighter pink, more universally liked. Blueberry is tarter, deeper purple, less sweet. Order strawberry if you want crowd-pleasing; blueberry if you (or your guest) tend to find desserts too sweet.
Will it travel okay if I want to take it to the beach?
Yes, with planning. Take it from the freezer in an insulated bag with an ice block, plan to eat within 60–90 minutes outdoors. The cream stays stable but softens in heat — soft is fine, melting is not. For long beach days, prefer a chilled cooler and serve as soon as it reaches sliceable softness.
