The combination works because lemon is sharp and clean, raw cocoa is bitter and round, and the meeting point in the middle is something neither flavour reaches alone. The cream layer is whipped to a mousse texture, lighter than any other cake we make. The result is a citrus-and-cocoa dessert that reads as elegant, summer-friendly, and decisively not what your guests are expecting.

It is also the lightest cake on our menu. Where the cheesecakes are dense and the choco-caramel is layered and substantial, the chocolate-lemon mousse eats more like a refrigerator dessert than a slice of cake. People who finish a slice of this almost always say "I could have eaten more" — which is the opposite of what they say about the heavier cakes.

Is the lemon dominant or subtle?
Subtle but present — about a third of the flavour. The cake reads as a chocolate cake first, with a citrus lift, not as a lemon cake with chocolate. If you taste blind, most people identify "chocolate" before they identify "lemon".
Why is there turmeric in the cream — does it taste like turmeric?
