The Cake Your Diabetic Mum Can Actually Have

If you're diabetic, you've probably stopped buying cakes. The standard supermarket version runs 40 to 60 g of refined sugar per slice plus white flour — a glucose spike in two bites. Our cakes don't work that way. They're sweetened with dates and a small amount of agave or maple syrup; the base is cashew, almond, and oat, not refined flour; there is no added refined sugar. Customers have ordered regularly for diabetic mothers and partners — one daughter told us ours was the first cake her mum had eaten in years.

Honest disclaimer: dates and agave still contain natural sugars, and these cakes are not "free food". They are lower-glycemic and lower-sugar than any standard cake on the island, but you should still count carbs and monitor your levels as you would with any food. Are these cakes safe for diabetics?
Diabetic customers order from us regularly with no problems, but "safe" is the wrong word for any food in a managed diabetes plan. The cakes have no refined sugar and no white flour, and they're sweetened with dates and a small amount of agave or maple syrup. They have a meaningfully lower glycemic load than a standard cake. You still need to count carbs and watch your levels — but you can finally eat cake again. If you have specific medical concerns, talk to your doctor or dietitian.
How much sugar is in a slice?
It depends on the flavour and slice size. Roughly: a 12 cm cake cut into 6 slices gives slices with about 8–14 g of natural sugar each (mainly from dates), versus 25–40 g of refined sugar in a typical bakery slice of the same size. We can send exact numbers per flavour by WhatsApp before you order.

Which flavours are best for someone managing blood sugar?
The chocolate-forward cakes (Choco-Caramel Coconut, Chocolate-Lemon Mousse, Snickers) tend to have slightly less natural sugar than the fruit cheesecakes (Strawberry, Blueberry), because raw cocoa is bitter and the fruit ones lean on more dates and fruit purée. Pistachio-Vanilla is also a good option. All flavours are sugar-free in the refined-sugar sense — the difference is the natural-sugar load from fruit and dates.
How should the cake be stored?
Frozen — and most diabetic customers prefer it that way. Keep the cake in the freezer (good for about two weeks at peak quality), slice off one piece at a time with a hot knife, and defrost that single slice in the fridge for 2–3 hours or at room temperature for 30–60 minutes. Single-slice storage keeps the rest fresh and helps you portion-control naturally.
