No Eggs in Any Cake — Because Nothing Here Is Baked
Egg is one of the most common food allergies in children, and a birthday cake is the classic minefield: even bakeries with an eggless option usually crack eggs on the same workbench an hour earlier. Our kitchen never sees an egg. The reason is structural. A conventional cake needs eggs to bind and rise in the oven; our cakes are raw, so there is nothing to bind and nothing to rise. The base is almonds and dates pressed cold, the cream is cashews blended with coconut milk and set in the fridge — the cake holds its shape the way a cheesecake does, with no egg doing hidden work. Even our tiramisu skips the raw egg yolk that the classic mascarpone recipe depends on. Households that keep eggs out of the kitchen year-round — including many Indian and Jain families, where eggless baking is the standard — can order without reading between the lines.

Zero Eggs, Zero Cross-Contamination
No recipe in the kitchen uses egg, so there is no shared bowl, whisk, or counter where contact could happen. For egg-allergy families this is the difference that matters: it is not one eggless cake made in an egg bakery, it is an eggless kitchen.
Cold-Set, Not Baked
Conventional cakes need eggs to bind the crumb and hold the rise. These cakes are raw: an almond-and-date base pressed cold, cashew cream set in the fridge. Nothing needs binding, so nothing needs an egg — the structure comes from the recipe, not a substitute.
