A Cheesecake For People Who Don't Really Like Sweet Cake

The blueberry version of our cheesecake exists because there is a particular type of customer — usually adult, often Northern European, often someone who orders an espresso ristretto and means it — who finds most cake too sweet and asks if we have anything more restrained. This is the answer. Blueberries are tarter than strawberries, the colour is deeper, and the overall sweetness profile is noticeably lower without changing anything else about the recipe.

Same cashew-cream base as the strawberry cheesecake — soaked cashews blended with coconut milk, lemon, and vanilla, set with coconut oil — but the fruit on top and folded through the cream is fresh blueberries. The acidity of the blueberries cuts the sweetness of the dates in the base, so the overall flavour is more layered: tart, creamy, faintly nutty.

It is also the most photogenic cake in the lineup. The deep blue-purple against the pale cashew cream and almond base photographs unusually well — this is a cake people post. Good pick for an Instagram-friendly birthday, an anniversary dinner where the cake is the centrepiece, or as the dessert at a quiet adult gathering. Pairs especially well with strong black coffee or a dry sparkling wine.

Why blueberry instead of strawberry — what is the actual difference?
Same cashew-cream base. Blueberry is tarter, less sweet, and visually deeper (blue-purple vs pink). Order blueberry if you tend to find desserts too sweet, want a more fruit-forward profile, or want a cake that photographs darker and more dramatic. Order strawberry if you want crowd-pleasing.
Are the blueberries fresh?
Yes. Fresh blueberries on top and folded through the cream layer. We do not use blueberry compote, blueberry syrup, or blueberry flavouring. Out of season we use the best fresh blueberries available; the cake is at its peak in summer.
Is it noticeably less sweet than your other cakes?
Yes — alongside the chocolate-lemon mousse, blueberry cheesecake is the least sweet cake we make. There is no refined sugar in any of our cakes, but the dates plus blueberries combination is the most restrained sweetness profile in the lineup.
What kind of occasion suits blueberry cheesecake?
Adult-leaning gatherings: small dinner parties, anniversaries, birthday dinners with espresso and digestifs at the end, or any moment where the cake is the photographed centrepiece. Less ideal for kids' parties — for those, strawberry cheesecake or the snickers cake convert better.
Will the blueberries stain plates, fingers, or white tablecloths?
A small risk if the cake is fully defrosted and the cream gets soft enough that the blueberry juice runs. To minimise it, slice slightly firm (defrosted but still cool), use dark or patterned plates, and keep paper napkins close. A clean serve from cool slices does not usually stain.
Can I split a Big cake half blueberry, half strawberry?
Yes — on the Big size (22 cm), we can do a half-and-half top for the same price. It looks striking visually too: the colour split is sharp. Note it on the order form or by WhatsApp. Smaller sizes do not split well so we keep them single-flavour.
